Jam Muffins

For the dough
  • 100g Butter

  • 120g Milk

  • 2 Eggs

  • 130g Granulated Sugar

  • 200g Flour

  • 1 tsp Vanilla Extract

  • 3 tsp Baking Powder

  • A Pinch of Salt

For the filling
  • Jam of your choice


Step 1

Preheat your oven to 180°C/ 356°F and line your muffin tray with baking paper.

Step 2

Melt your butter and wait for it to cool down. Put the cooled butter, milk, eggs, vanilla extract, and sugar in the bowl of your electric mixer and whisk together on medium speed until smooth.

Step 3

Add the flour, baking powder, and salt to your bowl and whisk on medium speed until the mix becomes homogeneous. Don't over-mix as the muffins could get tough.

Step 4

Lay half of the batter in your muffin tray covered with baking paper. Add jam according to your liking then cover with the rest of the batter.

Step 5

Bake for 20-25 min or until a knife's blade comes out clean.

Leave to cool down for 15 min and enjoy!
